    Cookie - Carrot Bar Cookies

    List of Ingredients

    3 large eggs
    1 c. + 1/4 c. Splenda sugar substitute
    1/2 c. vegetable oil
    1 c. pureed carrots
    1 tsp. vanilla
    2 c. flour
    2 tsp. baking soda
    1/2 tsp. salt
    1/2 c. raisins
    1/2 c. walnuts

    Recipe

    Preheat oven to 350. Coat an 11x15" jelly roll pan with non stick cooking spray.
    Mix eggs, 1 c. Splenda, oil, carrots and vanilla together until creamy.
    Stir flour, 1/4 c. Splenda, baking soda, salt, cinnamon, raisins and nuts together in a bowl to blend well.
    Add flour mixture to creamy mixture and blend until creamy again.
    Spread batter evenly in pan and bake for 25 to 30 minutes, or until bars are firm in the center.
    Remove to a wire rack and cool to room temperature.
    Cut pan into 4 sections then into 7 sections. Makes 28 bars.

    Diabetic exchange per serving:
    1 starch, 1 fat
    Cho 17g, pro 2g, fat 5g, cal 135
    Low-sodium diets: Omit salt. Use salt-free carrot puree.
