    BreadMuffin - Carrot Cake Muffins

    List of Ingredients

    1 1/2 c. whole wheat flour
    1 tsp. baking soda
    1 tbsp. baking powder
    1 tsp. ground cinnamon
    1/4 tsp. ground nutmeg
    1/4 tsp. ground ginger
    1/4 c. chopped walnuts
    1 large egg
    2 tbsp. vegetable oil
    1/4 c. raisins
    1/3 c. lowfat milk
    1 8oz. can crushed pineapple in juice, undrained
    1 1/2 c. grated small carrots

    Recipe

    Preheat oven to 350. Oil or paper line a muffin tin.
    Combine the dry ingredients in a bowl.
    Add the remaining ingredients and stir to blend.
    Spoon into muffin cups.
    Bake for 20 - 25 minutes or until tester comes out clean.
    Makes 12 servings.
