    Dessert - Cheesecake, mock

    List of Ingredients

    6 plain graham wafers, 2 1/2x2 1/2", crushed fine to make 1/2 c.
    1 1/2 tbsp. melted I can't believe it's not butter light
    1 tbsp. granulated gelatin
    1/2 c. + 2 tbsp. cold water, separated
    1/3 c. boiling water
    1/2 tsp. grated lemon rind
    1/2 c. fresh lemon juice
    1/4 c. Splenda sugar substitute
    2 c. cream style 4% fat cottage cheese, (16oz.)
    1/2 tsp. lemon extract
    4 large strawberries, sliced in half
    non stick cooking spray

    Recipe

    Coat an 8x8x2" pan with non stick spray. Set aside.
    Mix the graham cracker crumbs and I can't believe its not butter light together thoroughly. Set aside.
    Soak gelatin in the 1/2 c. cold water.
    Combine boiling water and lemon rind. Add to gelatin mixture.
    Then add the lemon juice and Splenda, stirring until completely dissolved. Chill to the consistency of unbeaten egg whites.
    Place the 2 tbsp. cold water, cottage cheese, and lemon extract into a blender/food processor and cover. Turn to high speed for 10 - 15 seconds.
    Next add the partially set gelatin mixture into the blender/food processor, cover and turn to high speed for 15 seconds or until well blended.
    Pour into pan and sprinkle the graham cracker crumbs evenly over the top.
    Arrange halved strawberries on top so each serving will have 1/2 slice in the middle when cut.
    Chill several hours, until set.
    Makes eight, 4x2" servings.
