    Grilled - Chicken Satay Skewers

    List of Ingredients

    1 tbsp. corn oil
    3 tbsp. lime juice
    3 cloves garlic
    1 minced red chili
    1 tbsp. honey
    1 tsp. ground coriander seeds
    1 1/2 lbs. boneless, skinless chicken breasts, cut into 1" cubes
    skewers, (if using wooden, soak for 30 minutes prior to using)

    Recipe

    Combine the corn oil, juice, garlic, chili, honey and seeds in a blender until smooth.
    Place the chicken cubes in a bowl.
    Pour the sauce over top and marinate in the refrigerator for at least 4 hours.
    Oil your grill's rack and set 2" from heat.
    If using a gas grill, use a high heat.
    Thread the chicken cubes on the skewers and grill for about 4 - 5 minutes or until the chicken is cooked through, turning from time to time.
    Makes 6 servings.
