    Casserole - Chicken + Broccoli Casserole

    List of Ingredients

    1 3/4 c. pre packaged stuffing mix
    5 tbsp. melted I Can't Believe It's Not Butter Light
    1 10 3/4oz. can low fat cream of chicken soup
    2 c. finely chopped, cooked chicken breast
    1/2 c. non fat milk
    2 c. frozen chopped broccoli florets, thawed
    1 tbsp. minced onion
    1/8 tsp. ground black pepper

    Recipe

    Preheat the oven to 425. Coat a 2 quart casserole dish with non stick cooking spray.
    Place the stuffing mix and the butter light in a mixing bowl and combine completely.
    Set aside 3/4 c. of the mixture.
    Spread and pat the remaining mixture into the bottom of the casserole dish.
    In a separate bowl, combine the chicken soup, chicken, milk, broccoli, onion and pepper.
    Pour the chicken mixture over the stuffing mixture layer.
    Top with the 3/4 c. of stuffing mixture.
    Bake for 20 - 25 minutes or until golden brown and bubbly.
    Let stand 5 minutes before serving.
    Makes six 1 cup servings.
