    BreadMuffin - Chili Cheese Cornbread

    List of Ingredients

    1 c. + 2 tbsp. yellow cornmeal
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/4 c. whole wheat flour
    1 1/4 c. buttermilk
    1 egg + 1 egg white, lightly beaten
    1/4 c. shredded sharp cheddar cheese
    2 tbsp. chopped mild green chili or to taste

    Recipe

    Preheat oven to 450. Coat an 8x8x2" square baking pan with non stick cooking spray and dust with the 2 tbsp. of cornmeal. Sift together in a large bowl the 1 c. cornmeal, baking powder, baking soda, salt and flour. Set aside.
    In another bowl combine buttermilk, eggs, cheese and chili.
    Stir chili mixture into the dry ingredients.
    Pour batter into the baking pan and place on rack in upper third of oven.
    Bake 10 minutes or until dough is firm in center.
    Makes 12 two" pieces.
