    Dessert - Chocolate Bread Pudding

    List of Ingredients

    1/2 c. powdered unsweetened cocoa
    3 c. skim milk
    2 eggs
    1/2 tsp. salt
    1 c. Splenda sugar substitute
    2 tsp. vanilla extract
    8 slices dry bread, cut into small cubes, with or without the crusts or use enough bagels to measure same amount (will take less # of bagels than slices of bread)

    Recipe

    Preheat oven to 350. Grease a 1 1/2 quart baking dish.
    Sprinkle bread cubes into baking pan.
    Whisk the cocoa powder into the milk and heat over a medium heat. Set aside to cool slightly.
    Beat eggs until frothy.
    Add salt, Splenda and vanilla extract and beat well.
    Stir egg mixture into the chocolate milk mixture.
    Pour chocolate mixture over the bread cubes, making sure to saturate all the cubes.
    Set baking dish in a pan and pour hot water around dish so there is at least 1/2" of hot water surrounding the dish.
    Bake for 1 hour or until pudding is completely set.
    Serve warm or cold.
    Makes 14 servings.
