    DressingSalad - Corn Relish Salad

    List of Ingredients

    2 c. fresh corn kernels,
    ...or 1 10oz. pkg. frozen whole kernel corn, thawed
    1 c. diced red or orange bell pepper
    3 sliced green onions with green tops, (scallions)
    1 tbsp. dried cilantro or 1/3 c. freshly chopped
    2 tbsp. fresh lime or lemon juice
    2 tbsp. Olive oil
    1/4 - 1/2 tsp. hot pepper sauce to taste
    1/4 tsp. salt
    5 large red or green leaf lettuce leaves

    Recipe

    Combine the corn, bell pepper, onions and cilantro in a medium bowl.
    In a small bowl, whisk together the lime juice, oil, pepper sauce, and salt.
    Pour over the corn mixture. and toss well.
    Cover, and chill for at least 1 hour for flavors to blend.
    Serve on lettuce leaves.
    Makes 5 servings or 2 1/2 cups.
