    BreadMuffin - Cranberry Bread

    List of Ingredients

    2 c. flour
    1/2 c. sugar
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 medium orange, juice and rind
    1 tbsp. melted I Can't Believe It's Not Butter Light
    hot water
    1 beaten egg
    1 c. cranberries, halved
    1/2 c. chopped walnuts

    Recipe

    Preheat the oven to 350. Cut aluminum foil to fit the bottom of a 9x5" loaf pan.
    Coat the sides with non stick cooking spray.
    Sift the flour, sugar, baking soda and salt together. Set aside.
    Place the orange juice, rind and melted butter light in a measuring cup.
    Add enough hot water to the orange juice mixture to measure 1 cup.
    Stir the liquid into the dry ingredients.
    Add the egg, cranberries and walnut and stir to mix.
    Pour the batter into the lined pan.
    Bake for 1 hour or until a tester comes out clean.
    Let stand overnight for easy slicing.
    Makes 18 servings.
