    BreadMuffin - Cranberry Orange Bread

    Recipe Introduction

    For easier slicing, let the loaf set overnight.

    List of Ingredients

    2 cups
    1/2 cup sugar substitute or sugar
    1/2 level teaspoon baking soda
    1/2 teaspoon salt
    1 medium orange, zest grated and juice squeezed
    2 teaspoons melted light margarine
    1/4 cup egg substitute or 1 large beaten egg
    1 teaspoon vanilla extract
    1 cup chopped fresh or frozen cranberries
    1/2 cup chopped or minced walnuts, optional

    Recipe

    Preheat the oven to 350 degrees F.
    Place aluminum foil in the bottom only, of a 9x5 inch
    loaf pan. Coat the sides of the pan with cooking spray.
    Sift together the flour, sugar, baking soda, and salt in
    a large bowl. Set aside.
    Combine the zest, juice and margarine together.
    Add hot water to make 1 cup.
    Stir the juice mixture into the flour mixture.
    Stir in the egg, vanilla, cranberries, and walnuts.
    Pour into the pan and bake for 1 hour, or until a tester
    comes out clean.
    Let cool in the pan, on a wire rack.
    Makes 18, 1/2 inch slices.
