    Crockpot - Beef Barbecue Sandwiches

    List of Ingredients

    1 3lb. boneless chuck roast.
    1 c. honey bbq sauce
    1/2 c. low or sugar free apricot spreadable fruit
    1/3 c. chopped green or sweet red pepper
    1 small chopped onion
    1 tbsp. honey Dijon mustard
    2 tsp. Splenda sugar substitute
    12 hamburger rolls*

    Recipe

    Grease a 5 quart crockpot/slowcooker.
    Cut roast into quarters and place in crockpot.
    In a bowl, combine apricot fruit, chopped pepper, onion, mustard, and sugar.
    Pour over roast. Cover and cook on low for 6 - 8 hours or until meat is tender.
    Remove roast. Thinly slice and return to crockpot, and stir gently.
    Cover and cook 20 -3 0 minutes longer.
    Skim fat from sauce, stir and serve.
    Makes 12 servings.
