    Dessert - Apricot Mousse

    1 cup dried apricots, soaked in hot water
    ...for 1/2 hour, drain and save water
    1 cup soft tofu, (bean curd)
    2 teaspoons pure vanilla extract
    2 tablespoons non fat dry milk powder
    2 room temperature egg whites
    fresh mint, for garnish

    Place tofu, apricots, vanilla and milk into a blender/food
    and blend togehter. If necessary, add a bit of the apricot
    water to blend. Place this mixture into a medium bowl.
    Whip the egg whites until stiff but not dry; and fold into
    the apricot blend.
    Refrigerate or spoon into separate serving dishes to
    refrigerate.
    Serve garnished with mint, if desired.
    Makes 4 servings.
