    Dessert - Easy Fruit Cocktail Cobbler

    3/4 cup reduced fat biscuit baking mix
    1/2 cup + 2 tablespoons granulated sugar substitute
    2/3 cup non fat dry milk powder
    2 tablespoons chopped pecans, optional
    1, 16 ounce can fruit cocktail in fruit juice,
    ...drain and set aside 1/2 cup of the juice
    1/2 teaspoon ground cinnamon, or apple pie spice
    1/2 cup light frozen whipped topping, thawed

    Preheat over to 350 degrees. Spray an 8 x 8" baking dish with
    butter-flavored cooking spray. In a large bowl, combine baking mix, 1/2 C
    Splenda, dry milk powder, and pecans. Stir in reserved fruit cocktal liquid,
    Add fruit cocktail. Mix gently to combine. Spread batter into prepared
    baking dish. In a small bowl, combine remaining 2 tablespoons Splenda and
    applie pie spice. Evenly sprinkle mixture over top. Bake for 35 minutes.
    Place baking dish on a wire rack and let set for 5 minutes. Divide into 4
    servings. Top each with 2 tablespoons Cook White Lite. This freezes well.
