BreadMuffin - Dill + Rice Muffins

List of Ingredients
1 c. flour
1 tbsp. sugar substitute
1 tsbp. baking powder
1 egg or egg substitue to equal
1/2 c. low fat milk
2 tbsp. vegetable oil
1/4 c. cooked plain rice
2 tbsp. minced green onion
2 tsp. dried parsley
2 ttsp. dried dill
Recipe
Preheat the oven to 400. Coat 8 muffin cups with non stick cooking spray or use paper liners. Pour wwater into the empty cups for even baking.
Combine the flour, sugar, and baking powder in a bowl and stir to mix.
Beat the egg, milk, and oil together.
Add the egg mixture to the flour mixture along with the remaining ingredients.
Mix until the batter is just blended.
Spoon into the muffin cups and bake for 12 - 15 minutes, or until brown.
