    DressingSalad - Spinach + Mushroom Salad

    6 cups fresh spinach leaves
    1 cup sliced fresh mushrooms
    2 slices red or sweet white onion, separated into rings
    1/4 cup shredded carrot
    2 hard-boiled eggs, chopped
    2 slices turkey bacon, cooked, drained, and crumbled
    1/4 cup shredded nonfat or reduced-fat cheddar cheese
    1/2 cup Buttermilk-Herb Dressing or light ranch dressing

    Combine the spinach, mushrooms, onion, and
    carrot in a large bowl and toss to mix.

    Place a quarter of the salad mixture on each of 4 salad
    plates and top each salad with some of the eggs, bacon,
    and cheese. Serve immediately accompanied by the dressing.
    Yield: 4 servings
