    Breakfast - Sausage + Egg Muffin Meal

    Recipe Introduction

    Not only is this diaabetic, it is also low calorie.

    List of Ingredients

    1/4 lb. ground sausage meat
    1/4 c. chopped green bell pepper
    1/4 c. chopped onion
    1 c. liquid egg substitute, or 4 egg whites
    1 large egg
    1/2 lb. sliced mushrooms
    1/2 c. low fat shredded Cheddar cheese, (2oz.)

    Recipe

    Preheat oven to 350.
    Coat a 6 cup muffin pan with cooking spray.
    Or coat 6 of an 8 muffin tin and fill the other 2 with water.
    Use a medium frying pan, over a medium/high heat.
    Cook the sausage, pepper and onion for 5 minutes, or until the
    sausage is browned.
    Spoon the mixture into a bowl and let cool slightly.
    Stir in the egg substitute, egg and mushrooms.
    Spoon the evenly into the muffin pan.
    Sprinkle with the cheese.
    Bake for 20 minutes, or until the egg is set.
    Makes 6 servings.
