    Fish - Shrimp Diane

    1/2 cup sliced mushrooms
    2 tablespoons minced shallots
    1 tablespoon I Can't Believe It's Not Butter Light
    1/4 cup dry fat free chicken broth or white wine
    1, 15 1/2 ounce can artichoke hearts, drained + quartered
    1/4 cup chopped chives
    1/4 cup chopped pimiento
    12 - 16 ounces peeled, deveined shrimp
    salt and pepper to taste
    chopped parsley for garnish

    Saute the mushrooms and shallots in the butter light,
    until tender.
    Stir in the chicken broth, artichoke, chives, and pimiento.
    Bring to a boil.
    Then cover and simmer for 2 minutes.
    Stir in the shrimp. Cover and continue to simmer for 3 -5
    minutes, until the shrimp are tender and pink.
    Season to taste with salt and pepper.
    Sprinkle with parsley if desired.
    Makes 4 servings.
