    BreadMuffin - Five Grain Soda Bread

    List of Ingredients

    1 c. flour*
    3/4 c. whole wheat flour*
    3/4 c. rye flour*
    3/4 c. graham flour*
    3/4 c. rolled oats*
    2 tbsp. sugar substitute
    1 tbsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    3 tbsp. I Can't Believe It's Not Butter Light, softened
    3/4 c. raisins or finely chopped dates, optional
    1 3/4 c. buttermilk

    Recipe

    Preheat oven to 350. Grease or coat a baking sheet with non stick cooking spray.
    Combine the flour, wheat flour, rye flour, rolled oats, sugar, baking powder, baking soda and salt together in a large bowl.
    Cut in the butter light.
    Stir in the raisins and buttermilk to make a soft dough.
    Knead lightly on a floured surface until smooth.
    Place on the baking sheet and flatten into one circle about 2 1/2" thick, or divide the dough into 2 and make 2 smaller loaves.
    Cut a large X shape, about 1/4" deep on top.
    Bake for about 1 hour or until a tester inserted in the center comes out clean.
    Slice into 16 servings.

    Nutritional info per 1 slice serving:
    128 calories, 3g fat, 4g prot, 22g carb, 185mg sod, 1mg chol

    Diabetic exchange: 1 fat, 1 1/2 starch

    *If you don't have all the different flours, use what you do have to make 3 1/4 c. of flours mixture, or try 1/4 c. wheat germ or bran plus 3 c. flour. Just make a note of the ingredients and a note of the result.
