Dessert - Frozen Cream Cheese Fruit Salad

1/3 cup sugar substitute
1, 8 ounce package softened fat free cream cheese
1 cup fat free sour cream
pinch salt
1 tablespoon grated lemon rind
5 cups assorted fruit
..may be canned if drained, fresh, or thawed frozen
...example of assortment
...fresh sliced strawberries and cherries,
...crushed drained canned pineapple, fresh
...blueberries, thawed/drained frozen
...raspberries, frozen melon mix, thawed
...freshly chopped peaches
lettuce leaves to use as garnish, if desired
Recipe
Beat sugar substitute, cream cheese, sour cream, salt and
rind together in a large bowl until smooth.
Carefully stir in all the fruits.
Spread mixture into an 11x7x2 inch baking dish.
Place in freezer for at least 8 hours or overnight.
Remove from freezer and let set until softened enough to
cut, 10 to 15 minutes.
Cut into squares and serve on plates, with lettuce.
