    DressingSalad - German Potato Salad

    List of Ingredients

    3 slices bacon
    1 c. chopped onion
    1 tbsp. flour
    1/2 c. low sodium beef broth
    1/4 c. cider vinegar
    1 tbsp. sugar
    1/2 tsp. celery seeds
    1 1/2 lbs. potatoes, peeled, sliced and cooked, warm
    salt and pepper to taste
    2 tsp. dried parsley

    Recipe

    Cook the bacon in a medium frying pan until crisp. Drain and crumble.
    Discard all but 1 tbsp. of the bacon fat.
    Add the onion to the frying pan saute until tender and browned, about 5 minutes.
    Stir in the flour and cook for 1 minute.
    Add the broth, vinegar, sugar, and celery seeds to the onion mixture and heat to boiling.
    Boil, stirring constantly, until thickened, approximately 1 - 2 minutes.
    Pour the mixture over the warm potatoes in a bowl and toss.
    Season to taste with salt and pepper, and sprinkle with the parsley and toss again.
    Makes 6 servings.
