DressingSalad - Greek Seafood Salad

List of Ingredients
for the salad:
1 3/4 cups small pasta such as orzo,
...cooked al dente, rinsed and drained
Olive oil cooking spray
1/2 pound chopped crabmeat, scallops or shrimp,
...or a combination of any
1 cup frozen snow peas, thawed and cut in halves
1 1/2 cups chopped fresh tomatoes
3 ounces crumbled feta cheese
for the dressing:
1/4 cup Olive oil
1/4 cup fresh lemon juice
1 tablespoon dried oregano
2 teaspoons minced garlic
2 teaspoons grated lemon zest
1/4 teaspoon ground black pepper
Recipe
for the salad:
Place the drained pasta in a large serving bowl and
set aside.
Coat a frying pan with the cooking spray.
Saute the seafood for 2 minutes or until just done.
Drain and add to the pasta.
Cook the snow peas in boiling water for 1 minute,
or until tender crisp. Place in cold water to stop the
cooking and drain.
Place add the peas, tomatoes and cheese to the pasta.
Set aside.
for the dressing:
Use a small bowl to whisk the oil, juice, oregano, garlic,
lemon zest and pepper together.
Pour over the salad and toss until everything is coated.
Chill before serving.
Makes 8 servings.
