    DressingSalad - Hot German Potato Salad

    List of Ingredients

    5 med. potatoes (1 1/2 lbs.)

    5 slices bacon

    1/4 c. vinegar

    1/4 c. water

    1 large slightly beaten egg

    2 tsp. sugar or can use a sugar substitute

    1/2 tsp. salt

    1/4 tsp. ground black pepper

    1/2 c. chopped onion

    Recipe

    Peel the potatoes and then cut in halves.

    Cook until tender. Drain, slice and set aside.

    Cook the bacon to desired crispness.

    Drain and reserve 1 tbsp. of the bacon fat.

    Chop the bacon and set aside.

    Use a nonstick saucepan to combine the bacon fat, the vinegar, water, egg, sugar, salt, and pepper.

    Use a med/low heat and stir constantly until the dressing is thickened; do not allow the egg to curdle.

    Add the potatoes, bacon and the onion.

    Stir and heat through. Serve hot.

    Makes 8 servings.
