    DressingSalad - Italian Bread Salad

    List of Ingredients

    1 c. cubed fresh tomato
    2 tsp. dried basil
    1 tbsp. freshly chopped green onion
    2 tsp. olive or canola oil
    2 tsp. balsamic vinegar
    1/8 tsp. salt
    1 1/4 c. cubed French or sourdough bread
    3/4 tsp dried parsley

    Recipe

    Use a medium bowl to combine the tomato, basil, green onion, oil, vinegar and salt.
    Cover and let stand for at least 30 minutes.
    Place the bread cubes on a 15x10x1" baking sheet.
    Bake at 325 for 8 - 10 minutes or until lightly browned, stirring occasionally.
    Stir the warm cubes into the tomato mixture.
    Add the parsley and toss to coat.
    Serve immediately.
    Makes 2 servings.

    168 calories, 6 g fat - (1 g saturated fat), 0 chol, 387 mg sod, 25 g carb, 2 g fiber, 4 g prot
