    Dessert - Lime Mousse - for microwave

    List of Ingredients

    1/4 c. warm water

    1 packet unflavored gelatin powder

    1 tbsp. grated lime zest

    1/2 c. fresh lime juice, strained,

    ...(about 4 limes or 18 key limes)

    1/3 c. or more to taste, Splenda sugar substitute

    1 c. sour cream

    3 room temperature egg whites

    Recipe

    Put the warm water in a glass bowl and sprinkle the gelatin over it.

    Let sit for 5 minutes.

    Then microwave on high for 20 seconds, or until the gelatin is dissolved.

    Stir to be sure no lumps remain. If there are still lump, microwave until they disappear.

    Use a 4 cup casserole dish to combine the gelatin, the lime zest, and the juice. Stir well.

    Add the Splenda and the sour cream and stir again.

    Beat the egg whites until soft peaks are formed, adding a few drops of lime juice from one of the squeezed limes to stabilize the whites.

    Fold the egg whites into the lime mixture.

    Cover with plastic wrap and refrigerate for at least 4 hours before serving.

    Makes 4 servings.
