    Cake - Mini Fruitcakes

    List of Ingredients

    1 1/2 c. fresh pineapple chunks
    1 c. fresh or unthawed frozen cranberries
    1 c. dried currants
    1/2 c. chopped pecans
    1 2/3 c. frozen apple juice concentrate
    1 c. buttermilk
    3 large eggs
    3 c. whole wheat pastry flour
    1 1/2 tsp. baking soda
    1/2 tsp. fine sea salt
    1/2 tsp. ground cinnamon
    1/4 tsp. ground ginger
    1/4 tsp. allspice

    Recipe

    Preheat the oven to 350 degrees. Lightly butter and flour five 5 1/2x3 1/4x2") mini loaf pans.
    Combine pineapple, cranberries, currants and pecans together. Set aside 3/4 c. of the mixture.
    Blend together the fruit juice concentrate, buttermilk and eggs until combined. Set aside.
    Sift together the flour, baking soda, salt, cinnamon, ginger and allspice.
    Add wet ingredients to the dry ingredients and blend until smooth.
    Stir in the larger portion of the fruit/nut mixture.
    Pour batter evenly among pans.
    Sprinkle the 3/4 c. of the reserved fruit/nut mixture on top.
    Place pans on a large baking sheet and bake for approximately 45 - 55 minutes.
