    Dessert - Miniature Cheesecakes, (mock)

    List of Ingredients

    1 c. 5% Ricotta cheese
    1 c. low fat cottage cheese
    1/3 c. granulated sugar
    1 medium egg
    1/4 c. light sour cream
    1/2 tsp. cornstarch
    1/8 tsp. vanilla extract
    fruit puree, optional

    Recipe

    Preheat the oven to 350. Line 10 muffin cups with paper cups.
    Use a food processor to combine the Ricotta cheese, cottage
    cheese and sugar. Puree until smooth.
    Beat in the egg.
    Blend in the sour cream, cornstarch and vanilla until well mixed.
    Pour the batter into the muffin cups.
    Set muffin tin in a larger pan.
    Pour in enough hot water to come half way up sides of the cups.
    Bake for 30 - 35 minutes or until tester comes out clean.
    Remove from water and let cool on wire rack. Chill.
    Makes 10 servings.
    Serve with fruit puree, if desired.
