    BreadMuffin - Peach Muffins

    List of Ingredients

    1 cup freshly chopped peaches
    1 teaspoon lemon juice
    1 cup regular flour
    1 cup whole wheat flour
    1/4 cup sugar substitute or sugar
    1 level tablespoon baking powder
    1/2 teaspoon ground cinnamon
    1/4 teaspoon salt
    1/4 cup egg substitute, or 1 large egg
    1/4 cup Corn oil, or Canola
    1 cup low fat sour cream or fat free milk

    Recipe

    Preheat the oven to 400 degrees F.
    Coat a muffin pan with cooking spray or use paper liners.
    Combine the peaches and lemon juice together in a small
    bowl. Stir lightly and set aside.
    Using a large bowl, stir together the regular flour, the wheat
    flour, sugar substitute, baking powder, cinnamon,
    and salt. Set aside.
    Using a small bowl, beat together the egg, oil, and sour cream.
    Add the wet ingredients to the dry ingredient and mix until
    moistened.
    Lastly, fold in the peaches.
    Pour each muffin cup about 2/3 full.
    Bake for 25 minutes, or until a tester comes out clean.
    Remove from the pan immediately to avoid sticking.
    Makes 12 muffins/1 per serving.
