    Breakfast - Potato Pancakes

    List of Ingredients

    2 large peeled, coarsely grated baking potatoes
    ...(about 1 1/4 lbs.)
    1 small grated onion
    1/4 c. egg substitute, or 1 large egg
    1/4 c. flour
    1/2 tsp. salt
    4 tsp. I Can't Believe It's Not Butter Light

    Recipe

    Preheat the oven to 250.
    Combine the potatoes, onion, egg substitute, flour,
    and salt in a large bowl and mix well.
    Heat a large nonstick frying pan over a high heat.
    Melt half of the butter light in the pan.
    Drop the mixture by scant 1/4 cupfuls into the pan.
    Flatten with the back of a spatula or turner.
    Cook until browned, about 4 - 5 minutes per side.
    Cook in batches, adding the remaining butter light
    as necessary.
    Keep the pancakes warm in a 250 oven while cooking
    the remaining mixture. Serve immediately.
    Makes 5 servings.
