    DressingSalad - Quick Refrigerator Sweet Pickles

    List of Ingredients

    5 c. thinly sliced cucumbers
    2 garlic cloves, cut in half
    2 c. water
    1 tsp. mustard seed
    1 tsp. celery seed
    1 tsp. ground turmeric
    2 c. sliced onions
    1 c. julienned carrot strips
    2 c. white vinegar
    1 1/2 c. sugar

    Recipe

    Place the cucumbers and garlic in a glass bowl.
    Combine the water, mustard seed, celery seed and turmeric in a medium
    saucepan.
    Bring to a boil.
    Add the onion and carrots and cook for 2 minutes.
    Add the vinegar and bring just to a boil, then remove from the heat.
    Stir in the sugar substitute, then pour the mixture over the cucumbers and
    garlic.
    Let cool. Then cover and chill for at least 24 hours before serving.
    May be stored in the refrigerator for up to 2 weeks.
    Makes about 6 cups.
