    Ethnic - Russian Beef + Cabbage Stew

    1, 2 pound boneless chuck roast, trimmed of fat, cut into 1" cubes
    1 tsp. salt
    1/4 tsp. ground black pepper
    2 cups chopped onion
    1 shredded small head cabbage, (about 1 1/2 pounds)
    1, 28 ounce can tomato puree
    1, 28 ounce can diced tomatoes
    1 1/2 cups liced carrots
    1 cup packed brown sugar
    1 cup plain low fat sour cream or yogurt

    Season the meat with salt and pepper and place in a Dutch oven type pot.
    Add the onions and enough water to cover the meat.
    Bring to a boil, reduce the heat, cover, and simmer for 1 hour.
    Add all remaining vegetables and the brown sugar.
    Cover and simmer 2 hours longer. Skim any fat from the top of the stew.
    Serve in bowls, with 1 rounded tbsp. of sour cream on top of each serving.
    Makes 10 servings.
