    Fish - Salmon Casserole

    List of Ingredients

    2, 14 3/4 ounces cans salmon, drained and cleaned
    1/4 teaspoon ground black pepper
    1/2 teaspoon ground nutmeg
    1 pound coarsely chopped mushrooms
    1 finely chopped shallot
    1 - 2 tablespoons butter substitute
    2 tablespoons flour
    1 1/2 cups fat free milk
    2 whole cloves
    1 bay leaf
    1/2 cup unseasoned dry bread crumbs
    4 potatoes, peeled, boiled, mashed
    1 teaspoon paprika

    Recipe

    Place salmon in a 12x8x2 inch baking dish and flake.
    Combine with pepper, nutmeg, and mushrooms.
    Saute shallot in butter for 1 minute over a low heat.
    Whisk in flour and cook for 1 to 2 minutes, whisking constantly.
    Whisk in milk.
    Add the cloves and bay leaf.
    Heat to a boil and whisk until thickened, about 1 minute.
    Remove the cloves and bay leaf.
    Pour over salmon mixture.
    Sprinkle the bread crumbs evenly over that.
    Spoon the potatoes around the edge of the dish.
    Sprinkle with paprika. Leave uncovered.
    Bake at 375 degrees for 35 minutes, until top is lightly browned.
    Makes 8 servings.
