    Fish - Seafood Sampling

    List of Ingredients

    1 chopped yellow bell pepper
    1 medium onion, cut into 1/4's, then in 1/3's (wedges)
    1 tsp. Olive oil
    1 15ox. can low sodium diced tomatoes, undrained
    2 medium cubed potatoes, cut into 1/2"
    1/2 c. dry white wine or clam juice
    1/2 lb. haddock, cut into 1" cubes
    1/4 lb. bay scallops
    1/4 lb. shrimp, peeled, deveined
    1 tsp. Italian seasoning
    1/2 tsp. celery seeds
    1 tsp. hot pepper sauce
    salt to taste

    Recipe

    Place the Olive oil in a large frying pan.
    Saute the yellow pepper and onion until lightly browned.
    Add the tomatoes with the juice, potatoes and the wine.
    Bring to a boil. Cover and reduce the heat and simmer, for 10 minutes.
    Add the haddock, scallops, shrimp, Italian seasoning and celery seeds.
    Let simmer until the fish is tender and flakes with a fork, about 10 - 15 minutes.
    Stir in the hot sauce and season with the salt.
    Makes 4 servings.
