    DressingSalad - Seafood + Rice Salad

    List of Ingredients

    2 cups chilled, pre cooked white rice
    1 cup chilled, pre cooked wild rice
    not quite 1/2 pound smoked bay scallops or smoked mussels
    1/2 cup diced red bell pepper
    1/2 cup diced green or yellow bell pepper
    1 cup diced peeled cucumber
    3 tablespoons light mayonnaise
    3 tablespoons light sour cream
    1 teaspoon dried dill weed
    1/4 teaspoon seafood seasoning
    1 tablespoon fresh lemon juice
    1/4 teaspoon freshly ground black pepper

    Recipe

    Combine the rices, scallops, peppers, and cucumber together
    in a large bowl. Set aside.
    Use a small bowl to combine the remaining ingredients. Mix well.
    Pour into rice mixture and toss together.
    Serve immediately or chill.
    Serve at room temperature.
    Makes 8, 3/4 cup servings.
