Fish - Shrimp Diane

List of Ingredients
1/2 c. sliced mushrooms
2 tbsp. minced shallots
1 tbsp. butter
1/4 c. fat free chicken broth or dry white wine
1 15 1/2oz. can artichoke hearts, drained + quartered
1/4 c. chopped chives
1/4 c. chopped pimiento
12 to 16oz. peeled and deveined shrimp
salt and pepper, to taste
parsley for garnish
Recipe
Saute the mushrooms and shallots in the butter in a large skillet until tender.
Stir in the wine, artichoke hearts, chives, and pimiento.
Heat to boiling.
Then reduce heat and simmer, covered, for 2 minutes.
Stir in the shrimp and simmer, covered, until shrimp are tender and pink, 3 to 5 minutes.
Season to taste with salt and pepper.
Sprinkle with parsley.
Makes 4 servings.
