    Fish - Shrimp Provencal

    List of Ingredients

    1 tbsp. olive oil
    2 tbsp. chopped shallots
    1 clove crushed garlic
    1/2 peeled, coarsely chopped tomato
    1/2 c. tomato sauce, (4oz.)
    1/8 tsp. cayenne pepper
    1 lb. shrimp, cleaned and boiled until they just turn pink
    2 tbsp.dry white wine
    1 tbsp. freshly chopped parsley, optional

    Recipe

    Heat the oil in a large frying pan, over a medium heat.
    Saute the shallots and garlic for 2 minutes.
    Add the chopped tomato, tomato sauce, cayenne pepper and salt and pepper to taste.
    Bring to a boil, stirring occasionally.
    Reduce the heat to low and let simmer, uncovered, for 10 minutes.
    Stir in the shrimp and wine and continue to cook for another 5 minutes.
    Remove from the heat and transfer to a serving platter.
    Sprinkle with parsley and serve.
