    Ethnic - South Sea Pork Kabobs

    List of Ingredients

    1 1/2 lbs. boneless pork, cut into 2 - 3" cubes
    2 tbsp. pineapple juice concentrate
    1 tsp. dried ginger
    1/3 c. water
    2 tbsp. lime juice
    2 tsp. dark rum
    six 8 - 10" skewers
    ...(if using the wooden ones, soak for 30 minutes first)

    Recipe

    Combine the juices, ginger, water, and rum in a bowl.
    Pour into a container with a lid or ziplock type bag.
    Add the cubes to the container/bag.
    Let the pork marinate for several hours or overnight.
    Thread the skewers with the marinated pork.
    Grill 6" from the heat for about 10 - 15 minutes, rotating the skewers every few minutes.
    Make sure the pork has no traces of pink inside.
    Serve with noodles or over rice if desired.
    Makes 6 servings.
