    BreadMuffin - Southern Spoon Bread

    List of Ingredients

    1/2 c. yellow cornmeal
    1 c. boiling water
    1/2 c. fat free milk
    1/2 tsp. salt
    1 1/2 tsp. baking powder
    1 tbsp. canola or corn oil
    2 large eggs, yolks separated from whites

    Recipe

    Preheat the oven to 375. Coat a 1 1/2 quart casserole with non stick cooking spray.
    Place the cornmeal in a medium bowl.
    Pour the boiling water into the cornmeal and stir until smooth.
    Beat in the remaining ingredients except for the egg whites.
    Use a small bowl to beat the egg whites until stiff.
    Then fold them into the cornmeal mixture.
    Pour into the casserole and bake for 25 - 30 minutes, or until set.
    Spoon into serving dishes and serve hot.
    Makes 6 servings.
