    AppetizerDip - Sun Dried Tomato Dip

    List of Ingredients

    1/4 pound sun dried tomatoes, not the kind in oil
    boiling water
    3/4 cup low fat Ricotta cheese
    2 teaspoons dried parsley
    1/3 cup vegetable broth or water
    3 tablespoons chopped black olives
    2 tablespoons Olive oil
    2 tablespoons toasted pine nuts, optional
    2 tablespoons grated Parmesan cheese
    1 teaspoon minced garlic
    .

    Recipe

    Place the tomatoes in a small bowl.
    Pour in just enough boiling water to cover.
    Let set for 15 minutes, then drain and chop the tomatoes.
    Place all the ingredients in a blender/food processor.
    Blend until well combined but still chunky.
    Makes 8 servings.
