Cake - Sunshine Orange Cake

1/3 c. I can't believe its not butter light
1/4 c. Sugar Twin Brown sugar substitute
1 tsp. Splenda or Sugar Twin sugar substitute
1 large egg
1 1/4 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. ground cinnamon
1/3 c. raisins, or finely chopped fresh apple
1 tsp. grated orange zest (peel)
2/3 c. unsweetened orange juice
Recipe
Preheat oven to 350. Lightly coat an 8x8x2" baking pan with cooking spray.
Sift together flour, baking powder, baking soda and cinnamon in a medium bowl. Stir in raisins/apples and orange zest. Set aside.
In a mixing bowl, combine I can't believe it's not butter, sugar sweeteners and egg.
Beat for 2 - 3 minutes, scraping sides of bowl as necessary.
Add dry ingredients to creamy mixture, alternately with the orange juice, beginning and ending with the flour mixture.
Pour the batter into the baking pan.
Bake for 18 - 20 minutes, or until a tester comes out clean.
Cool cake in pan on wire rack.
