List of Ingredients
2 c. skim milk
3 tbsp. quick cooking tapioca
1 egg
1/8 tsp. salt
1/2 c. sugar substitute
1 - 2 tsp. vanilla
ground cinnamon or nutmeg, optional
Recipe
Use a medium saucepan to combine the milk, tapioca, egg and salt.
Let soak for at least 5 minutes.
Cook over a medium/high heat, stirring constantly, until the mixture comes
to a boil.
Remove from the heat and stir in the sugar substitue vanilla.
Sprinkle lightly with cinnamon or nutmeg, if desired, when serving.
Good served warm or chilled.
