    Fruit - Tropical Fruit Salad

    List of Ingredients

    1 20oz. can unsweetened crushed pineapple in juice,
    ...drain and reserve juice
    18 ounces frozen unsweetened pineapple/orange/banana
    ...juice concentrate, thawed
    2 medium diced bananas
    1 15oz. can mandarin oranges,
    ...drained, rinsed, and halved
    24 paper baking cups
    lettuce leaves, optional

    Recipe

    Line 24 muffin cups with the paper.
    Add just enough water to the reserved pineapple juice to make 1 1/2 c. of liquid.
    Pour the liquid into large mixing bowl.
    Add the pineapple, the juice concentrate, bananas, and mandarin oranges; and mix well.
    Fill the paper cups 3/4 full with the fruit mixture.
    Cover tightly with plastic wrap and freeze for 2 hours or until firm.
    To serve, remove need number of cups from the freezer and let thaw for 20 minutes.
    Then remove from the paper and serve on lettuce, if desired.
    Makes 24 servings.
