    Breakfast - Tumbleweed Pie

    List of Ingredients

    1 lb. bulk pork sausage, (16oz.)
    1 small bunch sliced green onions
    2 cloves minced garlic
    1 tsp. salt
    1/4 tsp. ground black pepper
    1 26oz. bag frozen hash browns, thawed
    4 large eggs
    1 1/2 c. milk
    2 c. shredded sharp Cheddar cheese
    chopped tomato

    Recipe

    Place the sausage, onions, garlic, salt and pepper in a large, (12"), oven safe frying pan, over a medium/high heat.
    Cook and stir occasional, for 6 minutes or until the sausage is broken up and browned.
    Drain in a colander and return to the frying pan.
    Preheat the oven to 450.
    Add the hash browns and continue to cook over a medium/high heat for 2 - 3 minutes.
    Use a bowl to whisk together the eggs, milk, and 1 c. of the cheese.
    Pour the egg mixture over the sausage mixture.
    Sprinkle the top with the remaining 1 c. of cheese.
    Wrap the handle of the frying pan aluminum foil.
    Bake for 15 - 20 minutes or until set.
    Garnish with chopped tomato.
    Makes 8 servings.
