    Meat - Apple Cider Chicken

    Try this recipe with pork chops also, very good with either.

    List of Ingredients

    1 tablespoon flour
    1/4 teaspoon salt
    1/4 teaspoon pepper
    4 boneless, skinless chicken breasts
    1 tablespoon Olive or vegetable oil
    1/3 cup apple cider
    2 tablespoons cider vinegar
    1 tart apple, peeled + quartered
    1/4 cup raisins
    1 1/4 teaspoons grated gingerroot

    Recipe

    Combine the flour, salt and pepper in a small bowl and mix well.
    Sprinkle the mixture on both sides of the chicken breasts.
    Heat the oil in a large frying pan over medium high heat until hot.
    Add the chicken and cook until browned on both sides.
    Add the apple cider, vinegar, apple, raisins and gingerroot, and mix well.
    Reduce the heat to medium/low.
    Cover and simmer for 5 - 10 minutes or until the chicken is no longer pink inside.
    Remove the chicken and apple from the frying pan and place on a warm serving platter.
    Bring the juices to a boil and cook until slightly thickened, stirring constantly.
    Pour the sauce over the chicken and apple.
    Makes 4 servings.
