List of Ingredients
1/2 16 ounce bag wide egg noodles, cooked without
...salt, al dente to package directions, drained
3 large beaten eggs, or 3/4 cup substitute
3/4 cup low fat small curd cottage cheese
1 tablespoon brown sugar substitute
1 teaspoon ground cinnamon
1 teaspoon vanilla flavoring
1 large tart apple, diced into 1/4 inch pieces
1/4 cup raisins
1/4 cup melted I Can't Believe It's Not Butter Light
Recipe
Place the raisins in a small bowl.
Pour enough hot water in to just cover the raisins.
Let soak for 10 minutes, then drain.
Preheat the oven to 350 degrees F.
Coat an 8x8x2 inch baking dish with cooking spray.
Combine the eggs, cheese, sugar, cinnamon, and vanilla togehter in a large bowl.
Stir in the noodles, apple, and raisins.
Pour into the dish.
Evenly drizzle the butter light over the top.
Bake, uncovered, for 45 to 55 minutes, or until lightly browned.
Makes 12 servings.
May be served hot or chilled.
