    Vegetable - Apple Stuffed Squash

    List of Ingredients

    1 1/2 pounds acorn squash, (2 small sized)
    1 large diced apples
    2 tablespoons diced celery
    2 tablespoons finely chopped onion
    2 teaspoons light margarine, melted
    2 tablespoons water
    pinch of salt and pepper

    Recipe

    Preheat the oven to 400 degrees F.
    Coat an 8x8x2 inch baking pan with cooking spray.
    Cut the squash in half and remove the seeds.
    Place, cut side down, in the baking pan.
    Bake for 20 minutes.
    Use a medium bowl to combine the apples, celery, onion,
    margarine, and water together, mixing well.
    Remove squash from oven and turn over.
    Sprinkle with salt and pepper.
    Fill the squash halves with the apple apple mixture.
    Cover with aluminum foil and bake for 30 minutes.
    Makes 4 servings.
