    SoupStew - Asparagus + Leek Soup

    List of Ingredients

    3/4 lb. fresh asparagus, trimmed and cut into pieces,
    ...setting tips aside
    1 1/2 tsp. vegetable oil
    1 tsp. crushed garlic
    1 c. chopped onion
    2 sliced leeks
    3 1/2 c. chicken stock
    1 c. diced potato
    salt and pepper
    2 tbsp. freshly grated Parmesan cheese

    Recipe

    Use a large non stick saucepan to heat oil.
    Saute garlic, onion, leeks and asparagus until just softened,
    approximately 10 minutes.
    Add the stock and potato.
    Cover and simmer for 20 - 25 minutes or until vegetables
    are tender.
    Puree in food processor until smooth.
    Taste and adjust seasoning with salt and pepper.
    Return to saucepan.
    Steam or microwave asparagus tips just until tender.
    Then add to soup.
    Serve sprinkled with Parmesan cheese.
    Makes 4 servings.
