    Sidedish - Baked Beans, (NewEngland style)

    Baked Beans, (NewEngland style)

    8 ounces dried navy, or Great Northern beans, washed, sorted
    4 slices bacon,cut into 1 inch pieces,
    ...crisply fried and drained
    3/4 cup freshly chopped onion
    1 minced garlic clove
    3 tablespoons tomato paste
    3 tablespoons dark molasses
    3 tablespoons packed light brown sugar
    1/2 teaspoon dry mustard
    1/4 teaspoon dried thyme leaves
    1/2 teaspoon salt

    Recipe

    Cover beans with 2 inches of water in large saucepan.
    Bring to boil and boil, uncovered, for 2 minutes.
    Remove from heat and let stand, covered, for 1 hour.
    Then add more water to cover beans, if necessary.
    Bring to a boil again
    Then cover and simmer for 1 1/4 hours, until beans are
    tender.
    Drain beans and set liquid aside.
    Preheat oven to 325 degrees F.
    Combine the remaining ingredient together in a 1 1/2 quart
    baking dish.
    Pour enough of the liquid set aside to just cover beans.
    Cover and bake for 3 hours, stirring from time to time.
    Remove cover and bake about 1 hour or until the beans are
    done to your liking.
    Makes 8 servings.
