    Sidedish - Barley Palif

    List of Ingredients

    1 tablespoon margarine or butter
    2 cups sliced celery
    1 small chopped onion
    1/2 teaspoon dried thyme or marjoram leaves
    1 cup pearl barley, rinsed
    2 1/2 cups chicken or vegetable stock
    1/3 cup finely chopped walnuts or pecans, optional
    1/4 cup freshly grated Parmesan cheese
    2 teaspoons dried parsley or 2 tablespoons freshly chopped
    salt and ground black pepper to taste

    Recipe

    Use a medium saucepan and melt the butter over a medium heat.
    Add the celery, onion, and thyme. Saute for 5 minutes,
    or until softened.
    Stir in the barley and the stock. Bring to a boil.
    Cover. Reduce heat, and simmer, stir frequently, for at least 30
    minutes, or until the barley is tender.
    Add more stock if necessary.
    Stir in nuts, cheese and parsley. Sprinkle with salt and pepper.
    Makes 6 servings.
