Vegetable - Bean Burgers

for burgers:
2 c. canned black beans, rinsed and drained
1/2 c. dry seasoned bread crumbs
1 tbsp. dried dill or 1/3 c. freshly chopped
1/3 c. chopped red onions
1/4 c. finely chopped carrots
2 tbsp. cornmeal
1 egg
1 1/2 tsp. minced garlic
1/4 tsp. salt
for sauce:
3 tbsp. light sour cream
2 tbsp. light salad dressing or mayonnaise
2 tsp. freshly squeezed lemon juice
1/4 - 1/2 tsp. minced garlic
1/4 tsp. dried dill or 1 tbsp. freshly chopped
Recipe
Preheat oven to 425.
Coat baking sheets with cooking spray.
for burgers:
In a blender/food processor, combine black beans, bread
crumbs, dill, onions, carrots, cornmeal, egg, garlic and salt.
Pulse on and off until well combined.
With wet hands, separate and shape into 8 patties, approximately
1/4 c. per patty. Place on baking sheet.
Bake for 8 minutes, then turn and bake 7 more minutes
for sauce:
Use a small bowl to stir together sour cream, salad dressing,
lemon juice, garlic and dill.
Serve burgers hot with sauce on side.
Makes 8 servings of 1 burger with 1 tbsp. sauce.
