List of Ingredients
1 tablespoon Olive oil
2 teaspoons crushed garlic
1 medium finely chopped onion
2 diced celery stalks
2 shredded carrots
2 cups sliced mushrooms, optional
3 1/2 cups beef broth or stock
1/3 cup barley
2 small potatoes, peeled and diced
1/4 pound beef, diced
2 teaspoons dried parsley
Recipe
Saute the garlic, onion, celery, carrots and mushrooms
in the oil, for about 10 minutes, or until until tender.
Add the broth, barley, potatoes and meat.
Cover. Simmer for 50 minutes or until the barley and
potatoes are tender, stirring occasionally.
Makes 4 servings.
